Firmly Traditional Cheese
These are the cheeses that most people have heard of but haven't necessarily tasted"the real thing". That means (at the very least) cheese that is from a specific named cheese maker, not a generic cheese. Those in my collection are more than that. In my opinion, they are the best of their kind, in each case.
Montgomery's Cheddar is from Somerset - matured, sweet and subtle.
Trethowan's Gorwydd Caerphilly is one of the best British cheeses ever, nothing like the Caerphilly you may have tasted elsewhere!
Vintage Red Leicester is the only remaining traditionally made raw milk Red Leicester and you can taste the difference.
Berkswell and Lord of the Hundreds are 2 excellent traditional hard sweet sheep milk cheeses.
